Ordering Beef
BLE-COR Farm sells animals that are around 3 years old for beef. These animals are approximately 800-1000 pounds on the hoof. You may choose to purchase the whole animal, half (side), or quarter (half side).
Hanging weight is used to determine the cost to the customer. The "hanging weight" is the weight of a side of beef after slaughter, when the animal has been skinned and cleaned. The customer is not charged for the hide, hooves, entrails, bones, or offal. The exact weight is provided by the butcher before delivery.
BLE-COR Farm delivers to the customer's location with the beef vacuum sealed and hard frozen in bulk boxes. Each individual package of beef is identified as the type of cut. Ground beef is generally provided in 1lb. packages, but the customer can specify the preferred weight of each package.

Additional Information
- All animals are USDA inspected at the time of slaughter
- Meat is hard frozen/aged between 1-3 weeks (customer preference). Three weeks is the usual time.
- Organs (tongue, heart, liver, kidneys, bones) may be delivered at the customer's request
- The percentage of fat in the ground beef is customer selectable.
